Tasting Notes by the Winemaker
Pinot Grigio, Pinot Gris or Grauburgunder is a white wine variety with greyish-blue berries and compact small bunches.
Dornier Pinot Grigio is a fresh and fruity easy-to-drink wine. The wine has delicate aromas of tropical and citrus fruit. It is soft on the palate in a balanced elegant style with a good finish and pleasant acidity.
Vineyards
The grapes are from a single vineyard in Wellington. The soil is made up of red and yellow decomposed granite and the vineyard is situated on a north facing slope with a gentle incline. The yields are naturally low with concentrated fruit, full of flavour.
Winemaking
The grapes are harvested by hand at optimum ripeness. Hand harvesting allows us to sort the fruit in the vineyard. The juice was fermented in stainless steel tanks at a low temperature and aged on the lees for 6 months to give the wine a rich and creamy texture.
